Originally from Kilkenny in Ireland, Brian joined IT Sligo in January 2020. After training in nutrition and dietetics at Robert Gordon University, a move to the University of Aberdeen for a PhD set the course for a career in research-based practice. He has had the fortune to practice as a Dietitian at prestigious sites across the UK, including, Imperial College Healthcare NHS Trust, Guy's and St Thomas' NHS Foundation Trust, University College London Hospitals NHS Foundation Trust, University of Hertfordshire and UCL. He also sits on the European Federation of the Associations of Dietitians (EFAD) Research and Evidence Based Practice Committee.

Brian has spent some time leading a voluntary project in India. His voluntary work was part of a wider nutritional surveillance project for Seva Mandir, a community development non-profit organisation in the Udaipur district of Rajasthan, India. Prior to joining IT Sligo, he served as a Lecturer in Nutrition at UCL, an honorary senior dietitian at University College London Hospitals NHS Foundation Trust (UCLH) and a Lecturer in Dietetics at the University of Hertfordshire.
